This is my ultimate favorite recipe for New York cheesecake, plus it is my skinny version!!! I just love cheese cake so much, but hate the fact that it is too rich or too sweet in taste and too much calories are not good for your diet. But here's the problem solved. Same good taste with less calories so you won't feel guilty while eating whole piece!!
Recipe adapted from foodwishes adjusted to a skinny version,
Crust Ingredients:18 graham crackers low fat version
3 tablespoons melted butter light version
Filling Ingredients:1/4 cup organic all-purpose flour
1 cup Daisy sour cream light version
1 tablespoon organic vanilla extract
4 (8 ounce) packages cream cheese low fat version
1 1/2 cups white sugar ( You can use Truvia 5tbsp+1/3 cup instead sugar, it is all-natural stevia-based low carb sugar)
2/3 cup milk (low fat, Omega version)
4 Organic eggs
Half box organic strawberry
Tools: 9 inch spring baking pan
Crush the honey graham cracker into sand like small pieces
This is the perfect density for the crust
Spray a little bit of pam baking oil on the baking pan
Pour the cracker to the baking pan and pat it down
Ready to be the perfect crust
Pour sour cream, flour and vanilla extract in a big bowl, use the egg beater whip it to the perfect mixture 1
Leave the Philly cream cheese in room temperature for 15 mins and unwrap them, mix cream cheese, sugar or truvia together and use a wood spoon. Mix sugar into the cream cheese; add milk, stir it, whisk the mixture until the milk is mixed in thoroughly. Drop in one egg, mix until the egg is has disappeared, then add next eggs one at a time in the same manner until all four are mixed in. Stir just enough, we don't want too much air in mixture 2.
Mixture 1&2
Mix two mixtures together
Transfer the perfect mixture into the ready to use crust baking pan, tab on the pan, settle the batter
Set temperature as 350 degree oven for an hour
Turn off the heat after an hour, take it out and let it cool
Add fresh strawberry and whip cream, Tadaa...sorry I left the cake in the oven after an hour, so it is a little bit over baked on the surface, but it still great taste!
